Using “100% Yamada Nishiki 100%” polished to 45%. Brewery in small batched at low-temperature. Rich & characterized by a calm honey-like scent, ideal for sweet shrip sashimi, boiled tofu and simmered taro and radish etc. Serve best around 10-15degC..
