Nanbubijin Awa Sake Sparkling is an elegant Japanese sparkling sake (awasake) from the historic Nanbu Bijin Brewery in Iwate Prefecture, Japan. This premium sake undergoes a secondary fermentation in the bottle — a technique similar to traditional Champagne production — resulting in natural effervescence, delicate bubbles, and a lively palate. Its refined ginjo-aroma, uplifting freshness, and balanced umami finish make it perfect for celebrations, aperitifs, or pairing with light cuisine.

    Tasting Profile

    • Aroma: Fresh and fragrant with delicate ginjo notes (pear, apple, and light floral hints).

    • Palate: Crisp and effervescent with a refreshing balance of sweet fruit and rice character, supported by subtle umami.
    • Finish: Clean, vibrant, and refreshing — perfect as a celebratory sip or accompaniment to light foods.

    Food Pairing

    • Sushi & sashimi — enhances fresh seafood flavors.

    • Oysters & shellfish — bright carbonation cuts through richness.

    • Cheese & light appetizers — balances both savory and creamy elements.

    • Aperitif — great chilled to start the meal.

Nanbu Bijin’s All Koji is crafted using 100% rice‑koji — a bold, unconventional approach that yields a deeply rich, sweet, and umami‑forward sake with expressive acidity.

    • Aroma: Sweet, rich, with notes of tropical fruits, honey, and a hint of koji‑derived nuttiness.

    • Palate: Full-bodied and luscious, showcasing pronounced umami and creamy texture from the all‑koji brewing method. Balanced acidity adds freshness and prevents it from feeling too heavy.

    • Finish: Long and slightly sweet, with lingering rice sweetness and subtle earthy undertones.

Nanbu Bijin All Koji is versatile due to its richness and umami profile. Ideal pairings include:

    • Japanese cuisine:

      • Grilled or simmered fish (e.g., mackerel, salmon)

      • Tempura or lightly fried vegetables

      • Rich noodle soups (e.g., miso ramen)

    • Fusion / creative pairings:

      • Cheese (especially creamy or mild types like Brie)

      • Fruit-based desserts or poached fruits

      • Cocktails or soda mixes (its sweetness complements sparkling mixers)

    • Serving suggestion: Best served chilled, on the rocks, or with soda to enhance its aromatic and umami qualities.
