It is Omine’s flagship sake, made using Yamadanishiki rice polished down to 35% and pursuing a balance of sweetness, umami, and acidity. It won first place in the Junmai Daiginjo category at the “SAKE COMPETITION 2023.”
TastingThe sweet and fresh aroma and fruitiness are reminiscent of pear and white peach. In the middle, you can feel the juicy sweetness and minerality of sugarcane and roasted almonds. The bitter aftertaste is reminiscent of cocoa beans and orange peel.
