    The ninth release in the Wakazo Project, this year’s edition embraces a traditional wine technique — Assemblage — to create a sake with a uniquely complex flavor profile. Assemblage involves blending different base sakes to highlight each component’s individuality, producing aromas and tastes that cannot be achieved by a single sake alone.

     

    Through careful experimentation and precise blending ratios, Takasago has combined the aromatic nuance and acidity from wine yeast with the crisp, dry umami characteristic of Wakazo BLACK, resulting in a sake of singular, distinguished character.

     

    This Limited Blend is a remarkable example of innovation in sake, offering a rich, layered, and harmonious tasting experience that celebrates both tradition and creativity.
