    “P35” indicates an exceptional 35% rice polishing ratio, meaning the rice has been milled down to just 35% of its original size — reserved only for ultra-premium Daiginjo expressions.

     

    “Nakadori” refers to the middle portion of the pressing process, widely regarded as the most balanced and elegant cut of sake, offering purity, structure, and finesse.
