    Mann is slowly brewed at low temperature, is the flagship of junmai daiginjo.

    Suigei has developed brewing technology to improve its appeal as “drinking sake.” To the last, cooking plays a leading role, and the goal is to have “tasteful yet crisp” and “fragrant and gentle” sake. In this product, all of the brewing technology of Suigei Shuzo is poured into it, and a rich and gentle aroma, sharp aftertaste, and moderate acidity are fused at a high level.

In order to bring out the quality of the base rice, we polished it to a ratio of 55%, and insisted on keeping the aroma of the brew subdued.     Produced by Suigei Brewing Co., Ltd., Junmai Daiginjo DAITO 2025 is an ultra-premium sake brewed in limited quantities using exceptional brewing techniques and carefully selected rice.

     

    For this release, Yamadanishiki rice from Hyogo Prefecture (Special-A district) is polished down to 30%, leaving only the purest core of the grain. The brewing team uses KA-1 yeast and Kyokai No.1801 yeast to create a beautifully expressive ginjo aroma while maintaining Suigei’s signature crisp structure.

     

    Only the Nakadori (middle cut) of the pressing is selected, which is considered the most refined and balanced portion of the sake. After pressing, the sake is stored under strict low-temperature conditions to preserve freshness and elegance.

     

    The result is a Junmai Daiginjo with exceptional purity, harmony, and depth — representing the pinnacle of Suigei’s craftsmanship.
