    Origin Yamagata
    Alcohol 15%
    Polishing 55%
    SMV ±0
    Size 1800ml

Brewed using Juyondai’s secret technique known as Hiden Tamagaeshi, this method involves adding kasu-tori shochu during the brewing process. Kasu-tori shochu is distilled from sake lees left after brewing a highly polished sake (down to 35% remaining), resulting in a rich and full-bodied spirit. Reintroducing it into the brew helps refine the sake’s character, giving this honjozo an aromatic profile reminiscent of a ginjo. It’s a technique that truly showcases the skill of the toji (master brewer).

Takagi Shuzo named this special honjozo “Honmaru”—a term that refers to the central keep of a Japanese castle and, by extension, the very core or essence of something. It opens with gentle notes of melon and banana, offering a fresh and lightly sweet impression. Mid-palate, it becomes more rounded and full, with a subtle spiciness gradually emerging on the finish, leaving a lasting impression.

    Recommended Pairings: Oysters, seafood, sashimi.

    A miracle bestowed on a 1995 vintage,” a once-in-a-lifetime bottle

Twenty years since the initial brewing process began in 1995, Gengai has aged into a markedly complex and dimensional miracle, with sweet, tart, bitter and umami weaving together in each sip. Gengai is the epitome of vintage sake – a bittersweet reminder that even unthinkable disaster can birth once-in-a-lifetime greatness.

When aged under appropriate conditions, sake undergoes chemical reactions that imbue deeper, more complex flavors and entrancing colors. With long gestation, a vintage can also develop surprising clarity and dignified, regal flavors. These changes cannot be purposefully induced and the exact outcome of the aging process is something only time and nature decide.

A deep and alluring amber Gengai entices with a pleasing acidity, a persistent yet mellow sweetness, and a perfect balance of sweet, umami, tart, and bitter. Mature and mellow, sharp and clear, Gengai can only be described as a multidimensional miracle of nature.

    AROMA

    MOUTHFEEL
The robust aroma of Gengai is juxtaposed with a smooth and luxurious mouthfeel that envelops like silk.

    FINISH
