Origin 宮城 Miyagi Alcohol 16% Polishing 7% SMV ± 0 Size 720ml In 2009, the first sake with a single-digit rice polishing ratio was released in Japan.
We brewed Zankyo with our newly built rice polishing machine, wondering “how far can we push rice polishing?” and “what will the final product taste like?”
The sake was brewed with a technical mindset. We suppressed the yeast-derived ginjo aroma and experimented with the core flavor of the rice. As soon as it finished fermenting, we were contacted by breweries in the same industry who wanted to taste the sake. We thought if industry professionals were interested in the sake, then our customers would be as well – from there Zankyo was born.At its conception, Zankyo’s rice polishing ratio was 9%. Since then it has evolved from 9%, to 8%, to 7%, the current rice polishing ratio. It is an infinitely pure, beautifully translucent, and stunningly balanced sake of exceptional quality.

Origin 福井 Fukui Alcohol 17% Polishing 35% SMV +4 Size 1000ml In Japan’s National Liqueur Competition of Autumn 23, “Yume wa Masayume” won the first prize for an aged sake. It’s characterized by a deep aroma, smooth flavor and a sharp, strident aftertaste. Many Japanese celebrities choose this sake to celebrate their achievements.
This Junmai Daiginjo sake is made from Yamada Nishiki rice grown under contract in Hyogo Prefecture’s Special A District and aged for approximately five years at -10°C. It is a blend of two Junmai Daiginjo sakes, one with a 20% polishing ratio and the other with a 35% polishing ratio. It boasts a rich, deep, and wonderful aroma, yet has a structured, moist, and smooth flavor, with a finish as sharp as a famous sword. The bottle, designed to represent a trophy honoring a life winner (one-of-a-kind = 1L), is heavy and handmade, with a pale golden hue. Origin Yamagata Alcohol 15% Polishing 55% SMV ±0 Size 1800ml Brewed using Juyondai’s secret technique known as Hiden Tamagaeshi, this method involves adding kasu-tori shochu during the brewing process. Kasu-tori shochu is distilled from sake lees left after brewing a highly polished sake (down to 35% remaining), resulting in a rich and full-bodied spirit. Reintroducing it into the brew helps refine the sake’s character, giving this honjozo an aromatic profile reminiscent of a ginjo. It’s a technique that truly showcases the skill of the toji (master brewer).
Takagi Shuzo named this special honjozo “Honmaru”—a term that refers to the central keep of a Japanese castle and, by extension, the very core or essence of something. It opens with gentle notes of melon and banana, offering a fresh and lightly sweet impression. Mid-palate, it becomes more rounded and full, with a subtle spiciness gradually emerging on the finish, leaving a lasting impression.

Kamoshibito Kuheij Hi No Kishi 720ml (GB)
Origin 愛知 AICHI Alcohol 16% Size 720ml HI-NO-KISHI is sake that allows you to experience a good change in facial expressions over several years. The terroir that can express HI-NO-KISHI is the Monryu district of Kurodasho, Hyogo Prefecture. Even within Kurodasho, this district has ideal conditions such as sunshine, temperature changes, water temperature, and temperature differences.
It is an area that is open to the east and west, has nothing to block the sunlight, and is resistant to heat because it draws water from the mountains. The location in the valley creates a temperature difference, which allows the rice to rest during the night and produces rice that is heavy.
Good to pair with red meat and spices.
