    We launched this premium sake in 2015 in collaboration with contemporary artists.
    Since its inception we have been honored to work with different Japanese contemporary artists each year.
    When rice is highly polished, it becomes extremely difficult to cultivate koji, which makes it difficult to extract the umami derived from koji, but with KIZASHI, we succeeded in extracting 1.5 times the umami than Zankyo Super 7 which also has a 7% rice polishing ration.
    We brew KIZASHI so its proportion of residual sugar falls in between that of NIIZAWA and Zankyo Super 7.
    This will age beautifully when stored in a refrigerator.
    It is a precious sake and we only brew 1000 bottles per year.
    Each year we collaborate with a different artist, therefore the label differs each year.

    Ohmine Sake Brewery was revived in 2010 after a half-century hiatus in order to spread the premium sake “Ohmine” to the world in this land where magnificent nature remains.
    Yamadanishiki, the highest grade sake rice grown with contracted farmers. Water used for brewing is Benten no Yusui, known as the water of the gods. It is characterized by its fragrance, lightness and umami, and sweetness on the palate.

    Riedel Extreme Junmai (Set of 2’S) 4441/27

    The Extreme glasses derive their name from their extreme contours. The bowls are reminiscent of polished diamonds that spread out wide and taper off at the top. This allows the wine plenty of room to breathe, enhancing and emphasizing the pleasant softness and generally fruity notes of the New World wines.

    This sake glass is specifically designed for Japan’s national drink. In contrast to Daiginjo, Junmai boasts a much greater complexity and range, making it the perfect companion for food. At first glance, the shape of the new glass may cause some confusion, as it might well be taken for a cocktail glass owing to its wide rim. This is, however, necessary to evenly disperse the grain-inflected, woody and sherry-like aromas of rich matured Junmai sakes. These aromas would be overbearing in a close-mouthed glass. The diamond-shaped base, which was developed from Riedel’s Extreme series, controls the flow so that the liquid stays on the tongue, highlighting the sake’s velvety texture. Riedel recommends the Junmai glass for fuller and umami-dense types of Junmai, such as Kimoto and Yamahai, or rich matured brews displaying complex notes of caramel, dried fruit and mushroom.     Mizumoto Junmai Sake aims for a beautiful sake quality by using a low-temperature soyashi water production method that makes use of lactic acid, yeast-free (yeast with brewery), and white koji enzymes. By doubling the ratio of both koji and shubo to more than the usual ratio, the nuances of mizumoto are firmly incorporated into the moromi, resulting in a refreshing sake with a balance of sweetness and acidity with low alcohol. The melody and different rhythms of various microorganisms such as white koji enzymes, citric acid, natural lactic acid, and yeast in the brewery play “improvisation” (improvisation).

    ‘Kissui” rice developed and bred by Yonetsuru Shuzo. The characteristics for ”Kissui” is the heart of rice is larger than “Kame-no-o” or any other sake rice. There is a lot of starch, which is considered to be a condition for high-quality sake rice. Although it is taller than the pro-American “Kame-no-o”, it is difficult to fall down. It is a bottled storage liquor that has been pasteurised only once. It is a junmai sake with a soft flavor.
