Tasting this sake will surprise you: it brings together the round character of most Kyoto sakes with a dry and clean finish, full of umami. It gives out flavors of ripe fruit and rice, yet is not sugary. A wonderfully structured sake, far beyond the (under-)promise on its label. Brewed with the Iwai rice strain, notoriously moody to grow and hard to brew.

This Junmai Daiginjo is brewed slowly over approximately four weeks using Kyoto yeast “Kyo no Koto” and natural spring water from Fushimi, Kyoto.
