    Taste, Palate & Food Pairing

    Taste & Palate

    • Very light-bodied and delicate — “super light” as the brand puts it.

    • Clean and refreshing, with likely subtle rice‑derived sweetness or mellow flavor, rather than heavy umami or richness (since it’s built for lightness).

    • Because of the added brewed alcohol and low ABV, expect something that’s easy on the palate, smooth, and more akin to a light wine or cool water than a heavy sake.

    Recommended Pairings / Serving Styles:

    • Best served very cold or partially frozen — the makers recommend chilling so cold it’s almost half‑frozen.

    • Great with light, fresh foods — think salad, cold seafood (sashimi, shellfish), light vegetable dishes, chilled tofu, simple appetizers — food that benefits from a refreshing, clean drink alongside.

    • Good as a summer/ warm‑weather drink — easy to sip casually, similar to chilled wine or sparkling water for a light meal or social gathering.

This sake invites you to focus on the balance of acids and residual sugars. One notch less polished, rice so much to express itself more in a suavity specific to Yamada.

It will nevertheless be necessary to wait a minimum of a year for the sugars to concentrate and release the potential of this sake. From then on and for at least five years at each tasting, the mouth will evolve, sometimes declining on pear and melon from the Andes, more and more ripe. The height achieved through the most advanced rice polishing technology.

The delicate flavor of Hyakukou is achieved through a rice polishing ratio of 18%. The sake rice used as the raw material is thoroughly polished over a period of more than 200 hours. This ensures a clear flavor without any impurities, while also bringing out the fresh sweetness and high-quality umami inherent in the rice without compromising it.

Yukimeji, the rice used for Daiginjo sake

The rice used is “Yuki Megumi,” a variety developed exclusively by Yamagata Prefecture. Registered in 2017, this relatively new sake rice variety is specifically designed for producing “Daiginjo.” Its stable core allows it to withstand high-level polishing, making it easy to control the brewing process and allowing for precise fermentation management, making it ideal for pursuing an elegant, delicate flavor at a high level.

Thorough quality control with refrigerated storage at -5℃

The bottled products are stored in a refrigerated warehouse maintained at -5°C throughout the year. We implement strict quality control from production to delivery to minimize changes in the quality of the sake due to the storage and transportation environment, so that you can always enjoy it in the best condition.

    Elegance, provided by nature

With Shirin, raw sake rice is polished to 18% for a pronounced clarity of flavor before storage in a mizunara Hokkaido Japanese oak barrel. Hokkaido, known for its pristine natural environs and rural charm, produces these oak barrels that imbue the sake with a forest-like aroma and open the door to a new world of sake.

A new elegance born of oak

Shirin promises layers of scent and flavor. The flavor is bold and tart in the mouth, smooth and creamy, with pleasant, smoky notes from oak cask storage, intriguing bitterness and hints of mineral. The flavors are in superb balance, playing off the nuances imparted by oak casks for a truly novel experience.

Nine-day oak storage brings exquisite aroma

Stored as raw sake in oak barrels for nine days, Shirin unabashedly takes on woody nuance. A strong oak flavor at three to four days melts into the sake at five or more, bringing flavors that surprise even the brewers themselves.

Shirin is meant to be explored, revealing layers of aroma and flavor. Bold and tart in the mouth, a smooth and creamy mouthfeel unfolds, mingling with smoky notes from the Mizunara oak cask, intriguing bitter notes, and hints of minerality. The flavors are nuanced and superbly balanced for a truly novel experience.

    AROMA
At first, the aroma brings notes of fresh fruits, followed by earthy botanicals. Aerated, there’s a creaminess that melds with the oaken barrel’s smoky, toasty character.

    MOUTHFEEL
Shirin is smooth and creamy on the tongue, with a lively tartness that expands and lingers.

    FINISH
An elegant fragrance and notes of bitter almond finish with a lingering tartness that balances the panoply of flavors.

    PAIRING
The subtle oakiness and intriguing balance of flavors make this the perfect sake to pair with more robust dishes like oven-roasted meats.

Nanbu Bijin’s All Koji is crafted using 100% rice‑koji — a bold, unconventional approach that yields a deeply rich, sweet, and umami‑forward sake with expressive acidity.

    • Aroma: Sweet, rich, with notes of tropical fruits, honey, and a hint of koji‑derived nuttiness.

    • Palate: Full-bodied and luscious, showcasing pronounced umami and creamy texture from the all‑koji brewing method. Balanced acidity adds freshness and prevents it from feeling too heavy.

    • Finish: Long and slightly sweet, with lingering rice sweetness and subtle earthy undertones.

Nanbu Bijin All Koji is versatile due to its richness and umami profile. Ideal pairings include:

    • Japanese cuisine:

      • Grilled or simmered fish (e.g., mackerel, salmon)

      • Tempura or lightly fried vegetables

      • Rich noodle soups (e.g., miso ramen)

    • Fusion / creative pairings:

      • Cheese (especially creamy or mild types like Brie)

      • Fruit-based desserts or poached fruits

      • Cocktails or soda mixes (its sweetness complements sparkling mixers)

    • Serving suggestion: Best served chilled, on the rocks, or with soda to enhance its aromatic and umami qualities.

The bottle design motif is based on the Tatewaku pattern, which means “good fortune will improve,” and represents beautifully rising bubbles. Please enjoy its gorgeous rose-like aroma, clean and pure taste, light acidity, and fine bubbles that rise forever from the glass.

    Taste & Palate

    • Aroma: Light, floral and slightly fruity — reminiscent of rose or white flowers (as described by the brewery).

    • Palate: Clean and pure, with a refreshing acidity and delicate fizz. The effervescence brings a light, airy mouthfeel rather than heaviness.

    • Finish: Crisp and refreshing, with a smooth and airy aftertaste, likely leaving a slight rice‑derived sweetness or gentle dryness.

    •

    Food Pairing Recommendations
Because of its lightness, bubbles, and clean profile, Kitaya Fiesta works well with lighter fare and dishes that benefit from acidity and effervescence — much like sparkling wine. Here are some ideas:

    • Seafood & Appetizers: Smoked salmon, sashimi, seafood carpaccio, shellfish, light fish dishes — the bubbles cleanse the palate and complement delicate flavors.

    • Light & Fresh Dishes: Salad with citrus dressing, Caprese, prosciutto & melon, vegetable crudités — acidity and fizz balance freshness nicely.

    • Japanese & Fusion Fare: Light sushi rolls, tempura of vegetables or seafood (lightly battered), cold tofu dishes, lightly seasoned salads.

    • Celebration & Dessert‑Friendly: Great as an aperitif or with light desserts: fruit tatin, berry desserts, or mild cheese — its subtle sweetness and sparkle can complement dessert without overpowering it.

Serving Suggestion: Chill thoroughly (about 5–10 °C), preferably serve in a flute or tulip‑style glass to appreciate fine bubbles and aroma.
