Tasting Notes & Profile

• Aroma / Nose:
  • Plums, blackcurrant (cassis), and dark chocolate
  • Hints of cigar box and spice (clove) 
  • Cedar, floral notes, and smoky oak
• Palate / Body:
  • Rich and juicy fruit flavors
  • Bright acidity and a bold tannin structure
  • Generous mouthfeel and a lingering finish
• Maturation / Winemaking:
  • Cold maceration for a couple of days to boost color and fruit. 
  • Fermented with selected yeast; then pressed off skins when ready. 
  • Undergoes malolactic fermentation. 
  • Aged for 18 months in French oak: about 35% in new barrels, the rest in 2nd‑ and 3rd‑fill barrels.

• Serving Temperature: Best served at around 16–18 °C.
• Food Pairings:
  • Hearty, flavorful dishes like stews, braised ribs, or grilled beef. 
  • Also goes well with mild, flavorful cheeses.

Aging Potential

• Can be enjoyed now, but has cellaring potential for several years.
