The name “Daiyame” (だいやめ) comes from the Kagoshima dialect meaning “to relax after a day’s work”. Using Hamada Shuzo’s proprietary aging and aroma-enhancing techniques, this shochu reveals an unexpectedly elegant aroma reminiscent of lychee, making it approachable even for those new to sweet potato shochu.
