Crafted by Kitagawa Honke, Tomio Junmai Daiginjo Yamadanishiki 49 (Hitotsubi) is a premium Kyoto sake made using 100% Hyogo-grown Yamadanishiki rice, polished to 49%.
This Junmai Daiginjo is brewed slowly over approximately four weeks using Kyoto yeast “Kyo no Koto” and natural spring water from Fushimi, Kyoto.
The term “Hitotsubi” (ひとつ火) means the sake is pasteurised only once, preserving fresher aromas and a lively, elegant character.
Produced in limited quantities, this sake offers a refined expression of Kyoto brewing craftsmanship with exceptional balance and finesse.
