    The fruity bouquet offers apple, peach and nashi pear. It’s both vivid and sensuous. The initial impression is that of the clean flavour with an aftertaste that combines the sweetness of fruit with soft mellowness.

    Pours a pale, water white colour in the glass. Supremely elegant on the nose, showing honeysuckle, white strawberry, watermelon rind, along with subtle cream and nougat. Likewise the palate is equally elegant and pure, with green melon and white strawberry sitting alongside pastry, nougat, panna cotta, and vanilla notes. Extremely refined, and with more than a passing resemblance to a crisp white wine, serve this sake chilled on its own or along with fresh dishes such as squid or red snapper sashimi.

    Brewed by Asahi Shuzo based in Yamaguchi Prefecture, Dassai focus on high quality, supremely modern Junmai Daiginjo sake using only Yamada Nishiki rice.     This is one of Nanbu Bijin’s regular sake, made with local Iwate Ginotome sake rice. This slightly dry sake can be served a refreshing aftertaste with the soft/light flavor and fine umami flavor. This sake was made as the best of best sake, which goes well with any meal. Nanbu Bijin Tokubetsu Junmai 2017 won “Champion Sake of 2017” at IWC International Wine Challenge!!!  (1,245 brands from 390 breweries around the world entered the IWC sake competition).

The Uonuma region in Niigata Prefecture is Japan’s leading heavy snowfall area with 2-3 m of snow. It is snow that sometimes becomes a nuisance for living in a snowy country where long and severe winters continue. The ancestors nurture the life and food culture unique to a snowy country utilizing the power of the snow. One of them is the “Snow Room”, which is a “natural refrigerator” created from the wisdom and ideas of people in snowy countries. Made with the highest quality of YAMADANISHIKI in Special Region “A” in HYOGO pref. 2Yrs of aging under 0 (zero) degree C that produces a fruity sake with an aroma reminiscent of grapefruit. It’s sophisticated yet mellow flavor flows irresistably over the tongue. It’s fully ripened aroma is ever present regardless of whether it’s warmed or chilled.     Yamadanishiki, the highest grade sake rice grown with contracted farmers. Water used for brewing is Benten no Yusui, known as the water of the gods. It is characterized by its fragrance, lightness and umami, and sweetness on the palate.

     

    Based on the basic philosophy of “respecting classic recipes while creating sake that our predecessors could not achieve”, this sake brewery is currently attracting attention as it is creating a new Japanese sake whirlwind both in Japan and overseas.
