With the intent of assuming responsibility of the sake production process, from cultivation to bottling, Kuheiji has dispatched a team of its staff to live and work in this agricultural town, alongside local farmers. The fruit of their cooperative labor is Kyoden, a sake derived from locally-grown, hand-cultivated rice. Through their efforts, this cooperative has tamed the wildness characteristic of Omachi rice, transforming it into a sake brew fullof elegance and finesse. A new way to enjoy Omachi junmai daiginjo. Origin Yamagata Alcohol 15% Polishing 65% Size 720ml ‘Kissui” rice developed and bred by Yonetsuru Shuzo. The characteristics for ”Kissui” is the heart of rice is larger than “Kame-no-o” or any other sake rice. There is a lot of starch, which is considered to be a condition for high-quality sake rice. Although it is taller than the pro-American “Kame-no-o”, it is difficult to fall down. It is a bottled storage liquor that has been pasteurised only once. It is a junmai sake with a soft flavor.

The Fine Sake Awards Japan2017 Daiginjo Division Gold“Yonetsuru Kamenoo Junmai-daiginjo” is a Junmai Daiginjo brewed from 50% milled “Kamenoo”, a famous rice cultivar known as “magical rice” which has been revived and used in full for the production of this sake. “Kamenoo” is a rice cultivar with excellent attributes for sake production that was first created in Yamagata prefecture in the Meiji period (1868-1912) and widely cultivated in eastern Japan. After acquiring a pure strain of seed rice stored at a research institute in Yamagata prefecture, workers at this brewery began to cultivate this rice locally from 1982 and gradually revived its use. Since then, it has formed the “Takahata Sake Rice Research Association” together with local farmers to work on the entire production process of Junmai Daiginjo from the cultivation of “Kame no O” to the brewing of the sake. This beautiful sake is distinctive for its full-bodied aroma and delicate taste which features subtle notes of grapes, pears, and bananas. The sake acquires an enhanced depth of flavor from its long fermentation process, during which it is aged at a low temperature for over 2 years in the refrigerators of the brewery. This is a valuable sake whose evolving flavors over the years will be an immense source of delight.

About “Yonetsuru”

Origin Kanagawa Alcohol 13% Polishing 60% Size 720ml Mizumoto Junmai Sake aims for a beautiful sake quality by using a low-temperature soyashi water production method that makes use of lactic acid, yeast-free (yeast with brewery), and white koji enzymes. By doubling the ratio of both koji and shubo to more than the usual ratio, the nuances of mizumoto are firmly incorporated into the moromi, resulting in a refreshing sake with a balance of sweetness and acidity with low alcohol. The melody and different rhythms of various microorganisms such as white koji enzymes, citric acid, natural lactic acid, and yeast in the brewery play “improvisation” (improvisation).

Since its inception we have been honored to work with different Japanese contemporary artists each year.
When rice is highly polished, it becomes extremely difficult to cultivate koji, which makes it difficult to extract the umami derived from koji, but with NIIZAWA, we have succeeded in extracting 2 times the umami than Zankyo Super 7 which also has a 7% rice polishing ratio.
One can experience the sweetness of the rice directly as it lingers on one’s palate so it can be thoroughly enjoyed.
It will age beautifully when stored in a refrigerator.
This sake is the penultimate of the 7% polished rice series, which began with the goal of “producing the best polished rice in the world”. It is limited to 1,000 bottles per year.
