Valpolicella is a land devoted to growing vines since ancient times: its name “vallis polis cellae” actually means “the valley of many cellars”. Here are grown indigenous vines like Corvina Veronese, Corvinone, Rondinella and Molinara, used to produce important and unique red wines. Amarone DOCG, the noblest red wine of Valpolicella and one of the most important Italian wines, has seduced the most refined palates worldwide, thanks to its inimitable personality, its charm and its character of traditional yet modern wine.
Taste Profile
-
Color: Deep ruby red, sometimes garnet at the rim.
-
Aroma (Nose): Intense and complex with notes of dried fruits (raisins, figs, cherries), spices (cinnamon, clove, black pepper), hints of cocoa, vanilla, and subtle oak from aging.
-

-
Texture: Soft yet structured, often with a luxurious mouthfeel.
Best For

Special occasions or celebratory meals due to its richness and high alcohol.

Food Pairings
-
Red Meat: Braised beef, roast lamb, venison, or game meats.
-
Cheese: Aged hard cheeses like Parmigiano-Reggiano, Pecorino, or mature Gouda.
-
Rich Dishes: Risotto with mushrooms or truffle, polenta with slow-cooked meats.
-
Chocolate/Desserts: Dark chocolate desserts can pair nicely due to Amarone’s dried fruit and cocoa notes.
