Kitaya Fiesta is a sparkling sake produced by second fermentation in the bottle using a new in-house developed yeast, KR03, under the concept of “a sake that will add color to the happy occasions of your life. The bottle design motif is based on the Tatewaku pattern, which means “good fortune will improve,” and represents beautifully rising bubbles. Please enjoy its gorgeous rose-like aroma, clean and pure taste, light acidity, and fine bubbles that rise forever from the glass.
Taste & Palate
-
Aroma: Light, floral and slightly fruity — reminiscent of rose or white flowers (as described by the brewery).
-
Palate: Clean and pure, with a refreshing acidity and delicate fizz. The effervescence brings a light, airy mouthfeel rather than heaviness.
-
Finish: Crisp and refreshing, with a smooth and airy aftertaste, likely leaving a slight rice‑derived sweetness or gentle dryness.
Food Pairing Recommendations
Because of its lightness, bubbles, and clean profile, Kitaya Fiesta works well with lighter fare and dishes that benefit from acidity and effervescence — much like sparkling wine. Here are some ideas:
-
Seafood & Appetizers: Smoked salmon, sashimi, seafood carpaccio, shellfish, light fish dishes — the bubbles cleanse the palate and complement delicate flavors.
-
Light & Fresh Dishes: Salad with citrus dressing, Caprese, prosciutto & melon, vegetable crudités — acidity and fizz balance freshness nicely.
-
Japanese & Fusion Fare: Light sushi rolls, tempura of vegetables or seafood (lightly battered), cold tofu dishes, lightly seasoned salads.
-
Celebration & Dessert‑Friendly: Great as an aperitif or with light desserts: fruit tatin, berry desserts, or mild cheese — its subtle sweetness and sparkle can complement dessert without overpowering it.
Serving Suggestion: Chill thoroughly (about 5–10 °C), preferably serve in a flute or tulip‑style glass to appreciate fine bubbles and aroma.
