    Mizumoto Junmai Sake aims for a beautiful sake quality by using a low-temperature soyashi water production method that makes use of lactic acid, yeast-free (yeast with brewery), and white koji enzymes. By doubling the ratio of both koji and shubo to more than the usual ratio, the nuances of mizumoto are firmly incorporated into the moromi, resulting in a refreshing sake with a balance of sweetness and acidity with low alcohol. The melody and different rhythms of various microorganisms such as white koji enzymes, citric acid, natural lactic acid, and yeast in the brewery play “improvisation” (improvisation).
