    The delicate flavor of Hyakukou is achieved through a rice polishing ratio of 18%. The sake rice used as the raw material is thoroughly polished over a period of more than 200 hours. This ensures a clear flavor without any impurities, while also bringing out the fresh sweetness and high-quality umami inherent in the rice without compromising it.

     

    Yukimeji, the rice used for Daiginjo sake

    The rice used is “Yuki Megumi,” a variety developed exclusively by Yamagata Prefecture. Registered in 2017, this relatively new sake rice variety is specifically designed for producing “Daiginjo.” Its stable core allows it to withstand high-level polishing, making it easy to control the brewing process and allowing for precise fermentation management, making it ideal for pursuing an elegant, delicate flavor at a high level.

    With Shirin, raw sake rice is polished to 18% for a pronounced clarity of flavor before storage in a mizunara Hokkaido Japanese oak barrel. Hokkaido, known for its pristine natural environs and rural charm, produces these oak barrels that imbue the sake with a forest-like aroma and open the door to a new world of sake.

    A new elegance born of oak

    Shirin promises layers of scent and flavor. The flavor is bold and tart in the mouth, smooth and creamy, with pleasant, smoky notes from oak cask storage, intriguing bitterness and hints of mineral. The flavors are in superb balance, playing off the nuances imparted by oak casks for a truly novel experience.

    Nine-day oak storage brings exquisite aroma

    Stored as raw sake in oak barrels for nine days, Shirin unabashedly takes on woody nuance. A strong oak flavor at three to four days melts into the sake at five or more, bringing flavors that surprise even the brewers themselves.

    Shirin is meant to be explored, revealing layers of aroma and flavor. Bold and tart in the mouth, a smooth and creamy mouthfeel unfolds, mingling with smoky notes from the Mizunara oak cask, intriguing bitter notes, and hints of minerality. The flavors are nuanced and superbly balanced for a truly novel experience.

    AROMA
    At first, the aroma brings notes of fresh fruits, followed by earthy botanicals. Aerated, there’s a creaminess that melds with the oaken barrel’s smoky, toasty character.

    MOUTHFEEL
    Shirin is smooth and creamy on the tongue, with a lively tartness that expands and lingers.

    FINISH
    An elegant fragrance and notes of bitter almond finish with a lingering tartness that balances the panoply of flavors.
