Kimoto preparation, a traditional method. Using K601 yeast “No. 6 yeast” and “white koji” that produces citric acid, it takes about a month to train it into a powerful yeast.
An amazingly low polishing rate of 90%. By slowly fermenting over time, it is finished in a powerful and deep flavored sake.
By using white koji, we are able to balance the five tastes and express a refreshing aftertaste.
As the temperature rises, the umami and sourness spreads, and you can enjoy the fun of changing expressions.
