Gohyakumangoku rice from Fukui Prefecture is polished to 50% and blended with two types of Kochi yeast AC95 and A14. Freshly squeezed junmai daiginjo fermented at a low temperature. It is not flashy, but has a well-balanced ginjo aroma and a refreshing sweet and sour taste that is typical of Suigei. A unique blend ratio of two types of ginjo yeast is used to create a fresh and new flavor.
